Blackwork has been heavily used in English Embroidery since Catherine of Aragon popularised it on her arrival from Spain. This technique has been updated more recently to include detailed shading to produce very realistic images. David is one of my favourite pieces, and I can confirm that his eyes are both blue - the difference in appearance comes from one blown out pupil.
